Jalapeño Pesto

Jalapeño Pesto

Ingredients

1 bottle Dave’s Gourmet Creamy Roasted Jalapeño Hot Sauce

2 cups basil leaves

2 garlic cloves, minced

¼ cup olive oil

¼ cup grated parmesan cheese + 1 tbsp. for garnish

salt and freshly cracked pepper

By way of The Kitchn, I found an informative write-up on everything you ever wanted to know about soy sauce, tamari, and even an Indonesian cousin of this popular condiment called Kecap Manis.  To paraphrase the bottom line on tamari:  It is specifically a Japanese form of soy sauce that is traditionally made as a byproduct of miso paste.  It is very similar to regular soy sauce but contains little to no wheat. It has a dark color and rich flavor because it contains a lot of soybean amino acids.

Directions

1. In a food processor, combine basil leaves, garlic, olive oil, parmesan cheese and 4 oz of the Jalapeño Hot      Sauce. Process until almost smooth, scraping down the sides of the bowl with a rubber spatula, as needed.

2. Add salt and pepper to taste. If desired, add 2 oz more Dave’s Gourmet Creamy Roasted Jalapeño Hot            Sauce for additional heat. Pulse 2-3 times to combine.

3. Toss sauce with your favorite cooked noodles and garnish with parmesan cheese. Yields 2-4 servings.
